Coffee fact:
Crema is like the Roaster’s Autograph. Great espresso leaves a mark. It starts as a thick, rich crema in a perfectly clean dimatasse. Then with every sip crema clings to the side of the dimatasse, leaving what is known as lacing. It’s a sign the roaster has done everything right.
